Yay for berry season! This salad boosts black quinoa, healthy greens, yummy blueberries, sweet fruit and extra protein – rounded off with a refreshing Moringa dressing.
Yes, all those ingredients actually do work well together! This salad is crunchy, sweet, yet slightly bitter. It’s even a bit spicy thanks to our organic Moringa powder. And of course it’s full of nutrients that your body will thank you for.

- 80g Black Quinoa (we used Kinoa)
- a handful of Mixed Greens
- Pomegranate Seeds
- half an Avocado
- 2 Apricots
- (vegan) Feta Cheese
- 1 tbsp Hemp Seeds
For the Dressing:
- 3 tbsp Cashew Butter
- 2 tbsp Lemon Juice
- 3 tbsp Water (more if neccessary)
- 1 tsp Roots Food organic Moringa Powder
- 0.25 tsp Ground Ginger
- Salt, to taste
Rinse the quinoa under running water and cook it according to the instructions. Set aside and let it cool down. Cut the apricots and feta chesse in cubes, half the avocado and wash the greens.
For the dressing, mix cashew butter, water and lemon juice together until they have a creamy consistency. Then add the Moringa powder and ground ginger and stir well. Add salt to taste.
You can add more water if you prefer a more liquid salad dressing.
Lastly, mix quinoa, fruit, berries, greens, pomegranate seeds and feta together, add Moringa dressing and sprinkel hemp seeds on top.
